Tonight I made a very yummy Chicken Pot Pie from scratch. It had a rich, flakey, and buttery crust. The whole family loved it.
This is my recipe. It’s super easy and healthy for the whole family.
Ingredients for pot pie filling
4 large boneless skinless chicken breasts
1cup yellow onion chopped
1cup frozen or fresh green pease
1cup frozen or fresh carrots
2long celery sticks chopped
2cups all purpose flour
1cup heavy cream
4cubes chicken billion
1tbs dried parsley
1tsp fine sea salt
1tsp ground black pepper
1/2 tsp Lemmon pepper
1tbs olive oil
first boil chicken breasts until fully cooked, then let cool and cut into small cubes. Then in a med-lrg sauce pan whisk together water, bullion, and seasonings. Once mixed together well slowly spoon in flour and whisk away until fully mixed, warm and beginning to thicken. Reduce heat and add your peas and carrots. Let simmer. In a another pan add chopped onions and celery and olive oil. Sauté until veggies are translucent. Let cool then add to mixture.Then last but not least add your chicken.
Ingredients for pie crust
2 3/4 cups all purpose flour
2sticks of unsalted butter (cubed)
1/2 cup ice water
First pre- heat oven to 350. Then in a large mixing bowl combine flour, sugar, and salt. Mix until mixed, slowly add your cubed butter. Use two butter knives to scissor chop butter into mixture until the butter is in little pieces the size of little peas.
Slowly add ice water until dough forms and becomes fully mixed.
Sprinkle flour on a clean counter top or table where you can roll out your dough. Transfer dough to the countertop or table. Rub some flour on your rolling pin to keep the good dough from sticking. Roll dough out, then roll into a ball knead the dough well, then roll out again. Flatten slightly and put in bowl, wrap with plastic wrap and refrigerate for 2-3 hours. Once dough is ready, roll out the dough cut it in half, then roll it out again big enough to fit your pie plate, transfer to pie plate. Since, pinch, or decorate the crust on the ledge as you wish. Fill pie with chicken mixture. The roll out the remaining dough for the cover of the pie. Pop it in the oven. Let bake 15-20 minutes or until crust is a beautiful golden brown.
